Sha Ren Gao

Sha Ren Gao requires substantive contact with sunshine. The early-maturing rice needs to be harvested in hot summer days and completely sundried before being ground. Then the flour must be kept for six months in a cloth bag before use. In this period, thanks to close contact with air and moisture seeping through the cloth bag, the flour will develop a unique flavor when steamed with sugar, amomi fructus flour, and tea-seed oil.

"Among the four pastries of Hunan province, Sha Ren Gao is the only one made with amomi fructus, a local herb good for the stomach," said Peng Xuehui, a successor of the “four treats”. The pastry, made with mixed rice powder and amomi fructus powder, is supposed to have a healing effect of dissipating humidity and arresting vomiting.
